About

Food trucks are an American institution, and Rolling Kitchen Challenge puts your team behind the counter of its own. Every team starts with a brief covering four things: the main ingredients, the truck’s location, its target customers and its opening hours.

With that brief in hand, teams make the same calls a real food truck owner makes. They choose a brand name, a signature dish, how the food will be presented and how it will be priced.

Then they plan the business side. Teams set a sales strategy, build a break schedule and assign every person a role, from head chef to front of house.

When the clock starts, the kitchens open and teams bring their concept to life. At the end, each team presents its signature dish and introduces its head chef, and the judges crown the best rolling kitchen of the day.

Learning outcomes

Rolling Kitchen Challenge is a collaborative way to build teamwork, communication and time management in a lively, hands-on setting.

Turning a brief into a brand, menu and sales plan shows the value of planning and organization. Teams quickly see how decisions about price, presentation and target customers all affect one another. Teams that settle on a clear concept early usually run the smoothest kitchens.

Running a kitchen brings together people from different departments, levels and personalities. Each person finds their strengths, takes ownership of their station and works toward the team's shared goal.

Presenting to the judges adds a final test of clear communication and customer focus. Because every person has a defined job, people see how their contribution affects the customer, the team and the bottom line, just like in a real business.
